Banana Carrot Breakfast Muffin



I woke up this morning very hungry but I didn't want to eat the usual things I have for breakfast. So I wanted to try one of the breakfast ideas I recently pinned on Pinterest.

I never thought that bananas and carrots would be so delicious together...I will definitely make these super quick and easy Muffins again.









Banana Carrot Breakfast Muffins (10 Muffins)


1 1/2 cups grated carrot (about 2 large carrots)
1 1/2 cups mashed banana (about 2-3 large bananas) 
  2 eggs
2 tsp vanilla 
1 cup flour 
1 cup oatmeal (we had oatmeal with chocolate so I used this)
2 tsp baking powder 

If you want you can add nuts, sugar, honey, cinnamon.

Preheat your oven to 180°C (335°F).

Combine the carrot, banana, eggs and vanilla.
Mix the oatmeal, baking powder and flour into the wet ingredients.
Now pour the mixture into the muffin tin and bake for 15 minutes or until cooked through.

As you can see, this is a very quick and easy breakfast recipe and will keep you full until lunch.

I cut the Muffin in a half and ate it with Nutella (this is optional of course but I like my breakfast sweet).
